These Halloween pumpkin shaped cheese & tomato bites are a fun Halloween food idea perfect for lunchboxes, Halloween parties or snack time.
If you've followed me for a while then you'll know that I love a cookie cutter! Using cookie cutters are a simple but effective way to create fun food! I've said many times before but it's always worth saying again, food fun doesn't need to be over complicated.
I recently discovered my cheese & tomato bites recipe coupled with a Halloween cookie cutter makes for a great pumpkin!
Halloween Cheese & Tomato Bites
Ingredients and Equipment
150g of plain flour
40g of unsalted butter
30g of grated cheese
1/2 tsp of paprika
6 cherry tomatoes (blended)
2 spring onions (chopped)
Some whole milk
Method
Preheat the oven to 200/180 fan and line a baking tray with baking paper. Add the paprika to the flour and mix well. Rub in the butter with your fingers until the mixture looks like fine breadcrumbs. Next add the tomatoes, spring onions and cheese to the bowl and mix well until the dough starts coming together. If its's too dry add a small amount of milk.
Knead the dough until it's soft and not too sticky. If it's too sticky add a small amount of flour. Roll out the dough on a floured surface and use pumpkin cookie cutters to cut out pumpkin shapes. Place bites onto the baking tray and bake for around 10/15 minutes.
