Kids Breakfast Quesadillas

My kids love quesadillas, they are one of our favourites for either lunch or dinner. We usually have them filled with cheese and veg. It never occurred to me that they would make a fantastic breakfast addition. I had some spare tortillas and we all know that peanut butter and banana are a great combination so I thought it was worth a try.


Limitless Flavour Combinations

Just like savoury quesadillas the options for sweet quesadillas are limitless. Experimenting with a lot of different combinations these are some of our favourites that we have discovered. 

Peanut Butter and Banana                                                          
Cream Cheese and Raspberries
Applesauce
Chocolate Spread and Strawberries


If you've never made quesadillas before they are ridiculously easy. Traditionally, quesadillas are made on a non stick frying pan but when you have a crowd to feed that's easier said than done. I personally like to use two frying pans to help speed up the process or alternatively you can grill under a low heat. If you are using a pan to make quesadillas then do not use any oil or butter, heat on a dry pan over a medium heat.

Obviously you can use any tortilla wrap, wholegrain, white or mini. My children are very skeptical about wholegrain wraps so I use regular ones but I do tend to use the mini ones. 

How To Make Quesadillas

Once you have chosen your fillings it's now time to make! Firstly, spread your chosen flavour onto the tortilla wrap but making sure to leave a small gap between the edge. Next, add any additional toppings but again making sure you do not go too close to the edge. Finally add another tortilla wrap on top, then add to a warm, dry pan.  Heat both sides for a few minutes until the tortilla wraps start to brown and the inside has melted. Alternatively, fold the tortilla in half to create a semi circle and add to the dry pan. Heat through both sides until melted.

Peanut Butter and Banana Quesadilla


Ingredients for one quesadilla

Two Tortilla Wraps
Peanut Butter
Sliced Banana
Sprinkle of Cinnamon

Method

Spread peanut butter onto one of the tortilla wraps, leaving a small gap around the edge. Next add the chopped banana and sprinkle some cinnamon. Place the second tortilla wrap on top. Heat the tortilla on a warm, dry pan over a medium heat. Heat each side for a couple of minutes until the tortilla browns and the insides melt.

Applesauce Quesadilla


Ingredients for one quesadilla

Two Tortilla Wraps
Applesauce
Sprinkle of Cinnamon (optional)

Method

Spread the applesauce onto the quesadilla evenly making sure you leave a small gap around the edge. Add a small sprinkle of cinnamon if using. Next add the second tortilla on top. Heat the tortilla on a dry pan over a medium heat. Heat each side for a couple of minutes util the tortilla browns and the insides melt.


Cream Cheese and Raspberries Quesadilla


Ingredients for one quesadilla

Two Tortilla Wraps
Cream Cheese/Soft Cheese
Raspberries

Method

Cover the tortilla with the cream cheese making sure you leave a small gap along the edge. Place the raspberries sporadically on the wrap but not too close to the edge. Add the second tortilla wrap on top and then place onto a warm, dry pan. Heat each side for a couple of minutes until the tortilla starts to brown and the inside has warmed through.

Chocolate Spread and Strawberry Quesadilla


Ingredients for one quesadilla

Two Tortilla Wraps
Chocolate Spread (Low Sugar)
Strawberries, thinly sliced

Method

Apply the chocolate spread evenly onto the tortilla wrap, leaving a small gap around the edge. I use a low sugar version from Meridian, cocoa and hazelnut butter. Place the strawberries onto the wrap, spreading them out. Next cover with the second wrap. Place the quesadilla onto a warm, dry pan. Allow each side to heat for a couple of minutes until lightly browned with a warm, melted inside.

These are just some of the variations you can have, as you can see the options are limitless. You can substitute the fruit for any variation. I would love to know what combinations you come up with.
