Breakfast Pizza

Pizza for breakfast is not a typical offering! I'm not talking about traditional, cheese, toppings or a leftover, cold takeaway from the night before! I'm talking about a sweet pizza! Pizza for breakfast is bound to be a hit with the kids.


This sweet pizza is simply made by spreading raspberry chia jam on a mini tortilla, then topping with your chosen fruit and finished with a little sprinkling of desiccated coconut. 


Now while this is made from refined sugar free ingredients it is very sweet so maybe only offer it occasionally. You could add some raspberry chia jam to natural yogurt to dilute the sweetness.

To make raspberry chia jam you simply add a cup of raspberries into a pan a heat for a couple of minutes until the raspberries break down then allow to cool for a minute then add a tbsp of honey. Add a tbsp of chia seeds and mix. Allow to cool and then store in the fridge in an airtight container for up to a week. Alternatively you could use sugar free jam.
