Cheese & Spinach Muffins

Back to school is this week and this year I have to make two lunchboxes every morning. So even though my seven year old has declared she wants a sandwich for lunch every day I want to keep my options open just in case she gets fed up, which I'm sure she will!


Cheese and spinach is one of my favourite combinations. I love having this combination in a puff pastry pinwheel. So I thought it was about time that I had a cheese and spinach muffin recipe. These are perfect for babyled weaning, toddlers and lunchboxes. Pop them in the freezer once cooled.



Cheese & Spinach Muffins

Ingredients

150g self raising flour
1/2 tsp bicarbonate of soda                                          
1 large egg
125ml whole milk
100g grated cheese
75g spinach (torn into small pieces)


Method

Preheat the oven to 160 degrees. Sift the flour and bicarbonate of soda into a large bowl and make a well in the center. In a jug whisk the egg and milk together then add this to the flour. Gently mix together. 


Add the cheese and then the spinach until it's all combined. Spoon the mixture into a greased muffin tray. Bake in the oven for 15-20 minutes until golden brown and springy.
