Sweetcorn Fritters

When I was weaning my son we made sweetcorn fritters a lot. They are the perfect finger food for baby led weaning and for babies moving onto finger foods. Since weaning these have still been a staple in our house. They are perfect for beating the sandwich rut and make a great addition to lunchboxes. 


As you know I love an easy recipe and these are only four ingredients and take less than 10 minutes from start to finish, mum win! 

Sweetcorn Fritters

Ingredients 

200g sweetcorn
60g plain flour
25g grated cheese
2 beaten eggs


Method

Simply mix all the ingredients together ensuring it's well combined. Heat some unsalted butter or oil in a pan. Fry on each side for 4 to 5 minutes until golden. Allow to cool on a wire rack. The cooked fritters will keep in an airtight container for up to 2 days or they can be frozen. If freezing, wrap individually in baking paper and then place in a freezer bag.
