Peanut Butter Oaty Protein Balls

Peanut Butter Oaty Protein Balls

I'm always looking to find extra ways to get protein into Oliver's diet other than milk and yogurt. He won't eat eggs and very seldom eats chicken or pork.

I've previously made protein balls before but wanted to improve the recipe. I'm glad I did as these turned out beautiful. I don't really like peanut butter but even I thought these were good!

To make you will need:

8 tbsp porridge oats
2 tbsp peanut butter
1 tbsp of ground flax seed
1 tbsp of chia seeds
1-2 tbsp of honey (I used 1 then added another tbsp to help the mixture come together)
6/7 dates

Soak the dates in some water until soft. In a bowl mix together the oats and seeds. Then transfer to a blender and add the remaining ingredients and blend until you get a thick paste. If it's not coming together add some more honey.

Then roll into little balls and store in an airtight container in the fridge. I left mines a good couple of hours before trying one.

This will make 8-10 balls depending on how large you make your balls.

No honey for under 1's
