Banana and Blueberry Muffin



Banana and blueberries are one of my favourite combinations. I've been experimenting with a child friendly recipe for my son for a while and I think I've got a winner. These contain no added sugar and are only sweetened with fruit so you don't need to worry about a post muffin sugar crash. Make ahead and store in the freezer and then use for breakfast or a healthy snack.

Banana and Blueberry Muffin

Ingredients 

150g of self raising flour
1/2 tsp baking powder
1 beaten egg
60g of unsalted butter
2 ripe bananas, mashed
Splash of whole milk
Handful of blueberries


Method

Sift the flour and baking powder into a large bowl and make a well. Melt the butter in a pan or in the microwave. Once melted add the butter, egg and milk to the banana mixture and mix well. Pour the banana mixture into the flour and mix lightly. Spoon the mixture a third of the way up into each muffin hole. Add two or three blueberries into each muffin hole then cover with the rest of the mixture. Bake at 180 for around 15 minutes until golden.
