I bought some puffed rice last week and have been using it only as cereal but thought I would make an alternative rice krispie bar only using refined sugar free ingredients.

To make them all you need is
1/2 cup of peanut butter
1/2 cup of honey
4 cups of puffed rice

Simply melt the peanut butter and honey together in a pan on a low heat. Once melted add the puffed rice and give it a good mix, coating all the rice. Place the mixture into a lined baking tray and allow to cool in the fridge. Once cool cut into bars and store in the fridge.

These were really good and Oliver loved them. Obviously not an everyday item but good for a treat or for a party food.
