Cheese & Tomato Mini Quiches

For a delicious and filling lunch idea why not try these mini cheese and tomato quiches. They are perfect for toddler lunches, for older kids school lunch boxes or even as a snack.


Having to make a lunchbox 5 days a week for 39 weeks of the year means that I'm always looking for new things to include. Like most of us, I get stuck in the sandwich rut very easily. Mini quiche's are a great addition to our lunch box rotation and we regularly include my mini broccoli quiches but sometimes its good to try something new.

I had some cherry tomatoes lurking in the fridge alongside some ready to roll shortcrust pastry and knew I wanted to try out a new quiche combination. Cheese and tomato has to be one of the best flavour combinations.  My kids are not overly keen on tomatoes on their own but once chopped up and in a recipe they are none the wiser! I know their is a lot of debate about hiding vegetables in children's food but I would rather get the goodness in this way rather than not at all. 

Cheese & Tomato Mini Quiches


Ingredients

500g of ready to roll shortcrust pastry
12 medium cherry tomatoes
1 beaten egg
100ml of whole milk
50g grated cheese


Method

Grease a fairy tin and preheat the oven from 180 fan. Roll out the pastry and cut out 12 rounds and place in each hole of the fairy tin. Chop the tomatoes into small pieces. 


In a bowl add the tomatoes, egg, milk and cheese and mix well. Spoon the mixture into the rounds just below the rim. Bake in the oven for 20-25 minutes until golden. Once cooled you can store them in an airtight container for a few days or pop them in the freezer.
