Banana Oat Cookies

So healthy and cookies are not two words that normally go together but I've got a healthy recipe for you that is even healthy enough to have for breakfast! So you all know that I love recipes that have minimal ingredients and are easy to make so you won't be surprised to know that these cookies only contain four ingredients.

 

These cookies only contain naturally occurring sugars and are so versatile that you can mix up the ingredients and add your own choices such as desiccated coconut, vanilla essence or even some chocolate chips, whatever you like!

Ingredients

100g porridge oats
25g pitted dates 
2 medium bananas, mashed
1/2 tsp cinnamon



Method 

Soak the dates in some warm water for around half an hour until they are soft. Once the dates are soft, blend them until a smooth consistency. Add the cinnamon to the oats and mix. Add the mashed banana and the blended dates to the oats and mix well. Once mixed place a spoonful onto a greased baking tray or on some baking paper in even amounts. I made 6 medium cookies but you could easily make more smaller ones. Bake in the oven at 160 fan for 12-15 minutes.
